Ok the Celeb is due a change so, first off is there any particular fluid I should use? And secondly how do I go about draining the old crap out?

To do a complete fluid change use a turkey baster or syringe to get as much as the old fluid as you can out of the fluid reservoir. Now Top up the reservoir with fresh fluid. Get an assistant to open up the bleed nipples in the correct sequence as described in haynes (with pipe on the end directed into a container). When they open the bleed nipple, get them to shout "OPEN" and when you hear this you turn the ignition with the brake pedal lightly depressed and the ABS system will pump the fluid out for you. Once teh fluid has pumped your assistant now closes the nipple. You turn ignition off and then prepare to do the process again until your clean fluid (make sure no bubbles in it) is coming through. Tighten nipple and then check the reservoir to see if it needs topping up. Now move on to the next wheel in the sequence.
Get a haynes manual though as I have probably missed something. Oh and ignore haynes warnings about the brake fluid being shot out by the ABS at super crazy pressures. It isn't as scary as they describe (admitedly I wasn't under teh car when we did the brake on my last car...Chris1Roll was but he said is was very un scary).
I will reitterate what martin said, for the sake of £30 to a garage to change your brake fluid, it's not worth messing with if you don't feel confident.

I bleed my brakes in the traditional way. This works fine with the latest type of ABS. Mark 4 is it? You actually have a proper master cylinder you see.
Adam could do this too. Basically as GCF said, but you pump the brake pedal rather than start the engine, and tighten the nipple up when the pedal is held to the florr...after all fuid is flushed.
The shringe thing is how i do it also.
