Wanted: seat belt holder, window regulators, temperature sensor (water) and rear tail lights

Seat belt holder? The pop out ones? Which side?

There's 2 temp sensors (one for the gauge, one for the ecu), also which engine?

Window regulators - There is a repair kit you can 3d print

Thanks but it's the bit at the end of the holder I need and it appears to be missing

If the bottom part is missing, check your top section to see if the connecting lug is intact. That's what usually breaks, hence the top sections were supplied by Volvo without the bottom part. Usually that's left loose but still threaded on the belt.

Confused - you have a GT, why do you want a B18 engine? It's a B20F in a GT.....

I have the fan switch and the indicator stalk. NB They’re both from an early 480 (‘87 ES) so the switch is for heating only, with the ‘off’ position. Switch is available now but you’ll have to let me know if you want the indicator stalk, it may be a couple of days before I can remove it.

Ah I see the confusion, the switch I need is that one that turns the radiator fan on when the coolant gets too hot, at the moment the fan is disconnected because the radiator fan was stuck constantly and drained the battery.

As for the indicator stalk, yes please! The indicators stopped working but the hazards still work and a quick Google suggested a new stalk would help.
