Not clear in the Haynes manual if the tappets are set Hot or Cold.Anyone know which it's supposed to be?

Hydraulic lifters/tappets don't have shims, the hydraulic (oil) pressure lifts them up to contact the cam.
The ones in the 480 are solid, no hydraulics, the height of the bucket is adjustable by means of a shim, or spacer, set into the top of the bucket. the clearance is therefore dependent a little on what happens when the metal expands once up to running temp.
Hydraulic buckets don't suffer from that fluctuation, and run at a theoretical minimum clearance. Provided obviously that the engine has oil in it.. if it drops low, or the pump is knackered, or, some twit has fitted a much lower viscosity "performance" oil that the engine was never designed for, then they'll produce a lovely sounding death rattle.
